Rose syrup is sugar syrup perfumed with rose and dyed a pink somewhere between bright and alarming. It is not a subtle ingredient and is not trying to be: a spoonful colors a whole glass of milk, and its flavor — floral, sweet, faintly cooling — is the signature of one dessert above all in Myanmar: faluda, the layered ice-cream-and-jelly drink of hot-season afternoons.
The syrup, like faluda itself, traces to the Indian subcontinent — falooda arrived in Burma with Indian migration during the colonial era, when Rangoon was among the most Indian cities in Asia, and the rose-syrup habit came with it. The famous branded version, Rooh Afza, has been made in Delhi and Karachi since the early twentieth century and remains the default bottle in South Asian grocers everywhere. Exactly when faluda settled into the Burmese repertoire is the kind of history nobody wrote down, but the ice cream parlors of Yangon and Mandalay have treated it as their own for generations.
In the Burmese glass-cabinet canon, rose syrup stays in its lane: it is the faluda pink, occasionally lending color to shaved-ice sweets, and little else. One bottle lasts a household a very long time.

Rooh Afza is the classic and is stocked by any South Asian grocer, though it is technically a rose-led herbal sherbet syrup rather than pure rose; simpler rose syrups from Indian, Pakistani, or Middle Eastern brands work equally well in faluda. Check the label for actual rose (or rose flavor) rather than plain red sugar syrup. Do not substitute rose water — it is perfume without sugar or color and does a different job entirely.

Sugar keeps it stable: an opened bottle lasts many months in a cool cupboard, and effectively indefinitely in the refrigerator. If the syrup crystallizes around the cap, stand the bottle in warm water; if anything ever grows on the surface, the bottle was watered down — discard it.

In faluda, the syrup goes in first and the milk over it, so the pink rises as it is stirred — a spoonful or two per glass is plenty, and the drink should end up rose-pink, not magenta. It also flavors the milk poured over sago and jelly in shaved-ice assemblies. Beyond drinks, treat it as a coloring-plus-flavor for cold sweets; it does not survive cooking with its perfume intact.
