Glutinous rice flour is milled from sticky rice, and everything that makes the whole grain cling makes the flour extraordinary: mixed with water it forms a smooth, extensible dough with a chew no other flour can fake. Its signature Burmese moment is mont lone yay baw — “round snack floating on water” — dumplings of this dough hiding a nugget of jaggery, boiled until they bob to the surface, rolled in fresh coconut.
Mont lone yay baw is inseparable from Thingyan, the April water festival, when neighborhoods make them in huge communal batches and — by cheerful oral tradition — someone always slips a bird’s-eye chili into one dumpling in place of the jaggery. Watching a neighbor’s face to see who got it is part of the festival. Beyond Thingyan, the flour turns up across the sweets chapter wherever a recipe wants that soft, springy, mochi-adjacent bite.
It is not interchangeable with plain rice flour. Glutinous rice flour doughs stretch and chew; plain rice flour batters set tender and slightly firm. Recipes that use both are tuning between those two textures deliberately.
Choosing itရွေးချယ်ခြင်း
The green-labeled Thai bags (Erawan and its peers) are the standard and are excellent; Japanese mochiko works identically at a higher price. The words “glutinous,” “sweet rice,” or “sticky rice” flour all mean the same thing. Avoid anything labeled simply “rice flour” for these recipes, and be suspicious of bulk-bin versions — freshness and purity are hard to judge loose.
Keeping itသိမ်းဆည်းခြင်း
Like plain rice flour: sealed, dry, cool, happily good for six months or more. It cakes in humidity, and caked flour makes lumpy dough that never fully smooths. If you make sweets rarely, decant into a jar and it will wait patiently between festivals.
In the potမီးဖိုချောင်တွင်
Work it with warm (not boiling) water to a smooth, earlobe-soft dough, and rest it briefly before shaping — it becomes markedly easier to seal around a filling. Boiled dumplings are done when they float, plus one minute. Doughs dry out fast at the edges, so keep the waiting portion covered. A spoonful whisked into a coconut-milk sweet also acts as a gentle, glossy thickener.
