Khao swè means noodle, but in practice it names Burma’s wheat noodle — pale-gold, springy strands, often enriched with egg or alkaline water, in the same broad family as Chinese egg noodles and ramen. The word itself is generally traced to Shan khao swè (“torn rice”), and the noodle culture around it reflects Burma’s position between China and India: wheat noodles arrived along Chinese and Shan trade routes, and hedging is fair about the details, most of which live in oral tradition rather than documents.
Its defining dish is ohn no khao swè: chicken simmered in a coconut-milk broth thickened with toasted chickpea flour, ladled over these noodles, finished with crisp noodles, egg, fried onions, chili oil, and lime. The dish is widely cited as an ancestor of Thailand’s khao soi — the resemblance and the shared name make the family relationship hard to miss, though who influenced whom is argued in both directions. Beyond that one bowl, khao swè is the noodle of teahouse stir-fries (khao swè kyaw), garlic-oil-tossed breakfast noodles, and the Panthay (Chinese-Muslim) noodle tradition of Mandalay.
It is the springy counterpoint to the soft rice noodles elsewhere in this group: where mohinga noodles yield, khao swè bounces back, and the coconut broth of ohn no khao swè is built for exactly that resistance.
Choosing itရွေးချယ်ခြင်း
Fresh thin egg noodles from a Chinese grocer’s refrigerated case are the gold standard; dried egg noodles (the nested kind) are a reliable pantry fallback and what our recipes assume when fresh is out of reach. Read the label — “egg noodles” from the international aisle sometimes contain no egg, only coloring, and the flavor is flatter. Wonton noodles, thin lo mein, or even good ramen are all within honest range.
Keeping itသိမ်းဆည်းခြင်း
Dried nests keep a year or more sealed in the pantry. Fresh egg noodles keep a few days refrigerated and freeze surprisingly well — freeze them in portions in their loose tangles and cook straight from frozen, adding a few seconds. Cooked noodles left undressed weld into a block; a little garlic oil tossed through holds them if the broth is running late.

Boil just to springy, rinse briefly to shed surface starch, and drain well — an overcooked khao swè turns ohn no khao swè into porridge. For the classic bowl, a portion of the same noodles deep-fried into a crisp tangle makes the traditional topping, one noodle in two textures. In stir-fries, cook them slightly under, since they finish in the wok.
