Where coconut milk is the liquid backbone of Burmese sweets, the grated flesh is their texture. In Myanmar this means fresh mature coconut, grated at the market or at home on a spiked stool grater, and used the same day — folded with jaggery into fillings, pressed onto sticky rice cakes, strewn over mont of every kind. The flesh of a mature nut is firm and only mildly sweet; the sweetness in the dish comes from what it is cooked with.

Outside the tropics, desiccated coconut — mature flesh, grated and dried — is the practical stand-in, and it is a better one than most dried ingredients manage. Steamed briefly or tossed with a few spoonfuls of warm water or coconut milk, it rehydrates into something honestly close to fresh-grated; used dry and toasted, it becomes a nutty finishing layer that fresh coconut cannot match. The two forms are different tools rather than a real thing and a compromise.

The classic pairing is coconut and jaggery cooked down together into a sticky, caramel-dark filling — the center of mont pyar thalet and a dozen other griddled and steamed sweets. That filling, more than any single dish, is the flavor most Burmese cooks abroad reach for when they want the taste of a childhood snack table.

Buy unsweetened desiccated coconut — the sweetened, softened shred sold for American baking is a different product and will throw off every recipe here. Finer cuts fold into fillings more gracefully; wider flakes toast better for topping. If a Southeast Asian or Indian grocer near you sells frozen grated coconut, buy it: thawed, it is the closest thing to market-fresh and needs no reviving. A whole fresh coconut is a fine weekend project but never a requirement on this site.

Desiccated coconut is fattier than it looks and the fat goes rancid — buy in modest quantities, keep it airtight, and store it in the refrigerator or freezer if it will sit more than a couple of months; taste before using anything old, since rancid coconut announces itself instantly. Fresh or thawed grated coconut is perishable like the dairy it resembles: refrigerate and use within two or three days.

Revive desiccated coconut with warm water or coconut milk before folding it into fillings, or steam it briefly alongside whatever it will top. Toasted dry in a pan until gold, it becomes a finishing crunch for sticky-rice sweets and semolina cake. Cooked down with grated jaggery and a pinch of salt, it is the filling — keep the heat low and stir; the sugar scorches just as readily as the coconut.
