Where mohinga noodles are delicate, this family is substantial. Nan gyi (“big noodle”) is a thick, round, white rice noodle close to Japanese udon in heft; nan pya (“flat noodle”) is its wide, ribbon-shaped sibling, kin to the noodles sold for pad see ew or pho. Burmese menus treat them as a pair — several classic dishes are made with either, and households simply use what the market had that morning.

Their headline act is nan gyi thoke, Mandalay’s great noodle salad: the thick noodles tossed warm with chicken curry reduced to its oil, toasted chickpea flour, fish sauce, and a landslide of garnishes — sliced fish cake, boiled egg, crisp noodles, coriander, lime. It is a salad that eats like a feast, and it needs a noodle with enough body to carry curry-strength dressing; thin vermicelli collapses under it. The flat nan pya version, and stir-fried or soupy preparations along Chinese-influenced lines, round out the family.

Abroad you will rarely find anything labeled nan gyi. The working equivalents are dried “rice sticks” in the widest cuts, fresh flat rice noodles from a Chinese grocer’s refrigerated case, or — for the round profile — the thick round rice noodles sold for Chinese guilin or bún bò Huế. All are honest; the goal is heft.

Choosing itရွေးချယ်ခြင်း

For nan pya-style flat noodles, fresh sheets or pre-cut fresh ribbons (ho fun) from a refrigerated case are best when available; otherwise dried wide rice sticks, the 5–10 mm cut, from any Thai or Vietnamese brand. For the round nan gyi profile, look for thick round rice noodles sold dried for bún bò Huế — the closest common match. Ingredients should be rice, water, and perhaps tapioca starch (a little is normal and adds pleasant chew).

Keeping itသိမ်းဆည်းခြင်း

Dried keep a year sealed in the pantry. Fresh rice noodles are a use-it-today ingredient: they stiffen irreversibly in the fridge, and while a hot-water soak partially revives them, they are never as silky as day one — buy them the day you cook. Do not freeze fresh rice noodles; the starch weeps on thawing.

In the potမီးဖိုချောင်တွင်

Cook dried noodles just to tender — thick cuts take longer than their package admits, so taste a strand — then rinse and drain well. For nan gyi thoke the noodles should still be warm when dressed; warm noodles drink the curry oil, cold ones just wear it. A genuinely common diaspora substitute for the round noodle is thick spaghetti, and it works better than pride suggests, though the chew is wheat, not rice.
