Kauk hnyin is glutinous rice — the opaque-white, short grain whose starch is nearly all amylopectin, so it cooks chewy and cohesive rather than fluffy. It contains no gluten; “glutinous” describes the glue-like cling. In Burma it is a breakfast and snack grain, not a dinner one: steamed and sold in banana-leaf twists with sesame salt and grated coconut, pressed around bananas, or griddled into kauk hnyin kyi tauk in the cool season.

The purple-black strain, ngacheik, is its own small institution — steamed with a little salt and eaten with fried garnishes or fresh coconut, its bran turning the whole pot a deep violet. And once a year glutinous rice becomes ceremony: htamane, the festival sweet of the month of Tabodwe, is pounded in huge pans with peanut oil, ginger, coconut, and sesame by teams of men with boat-oar paddles. The communal, slightly competitive cooking is as much the point as the eating — most of what we know of its origins is oral tradition, but the festival itself is very much alive.

The critical technique note: glutinous rice is soaked and steamed, not boiled. Boiled in a pot of water like ordinary rice it collapses into paste. Thai glutinous rice (the sticky rice of Isaan and Laos) is the identical grain and the easiest to buy well abroad.

Choosing itရွေးချယ်ခြင်း

Buy Thai glutinous rice — bags labeled “sweet rice” or “sticky rice” from Thailand are exactly right and turn over fast in any Southeast Asian grocer. Grains should be uniformly chalk-white and opaque; translucent grains mixed in mean adulteration with ordinary rice. For ngacheik dishes, look for Thai or Chinese black glutinous rice — check that it is actually glutinous (the label matters; plain black rice cooks separate, not sticky).

Keeping itသိမ်းဆည်းခြင်း

Same rules as any rice: sealed container, cool and dark, used within a few months for best texture. Black glutinous rice keeps its color indefinitely but its bran oils can slowly stale, so smell an old bag before committing it to a festival batch. Cooked sticky rice hardens quickly in the fridge; re-steam it (never microwave it dry) and it returns almost completely.

In the potမီးဖိုချောင်တွင်

Soak at least four hours or overnight, then steam over cloth or in a basket for 20–30 minutes until glossy and chewy through. On this site it appears under pè byouk with fried garlic oil, in banana-leaf snacks, and in the sweets chapter. A pinch of salt in the soak, not the steam, seasons it evenly — a small trick that separates street-vendor sticky rice from bland home batches.
