Burma’s prized delta rice — and why plain rice, not curry, is the actual main course.

In Burmese, to eat a meal is htamin sa — literally “to eat rice.” The curries, soups, and fried things that fill the rest of the table are, grammatically and culturally, accompaniments (hin) to the mound of plain rice at the center of the plate. That inversion matters for cooking from this site: Burmese curries are salted and oiled to season rice, which is why they taste too intense eaten alone and exactly right eaten properly.

The rice Burma is proudest of is paw san hmwe, a short-to-medium aromatic grain from the Ayeyarwady delta that cooks up fragrant, slightly clingy, and faintly sweet — it took the World’s Best Rice award at a 2011 industry conference, a fact Burmese growers will happily mention. Genuine paw san rarely travels; export quality and labeling are inconsistent, and most of the crop is eaten at home.

Abroad, the honest daily stand-in is good jasmine rice: aromatic, soft, and gently clingy in the same register, if longer in the grain. Any recipe on this site that says “long-grain rice” assumes jasmine. Basmati is the wrong direction — its dry, separate grains and pilaf perfume belong to a different table.

Choosing itရွေးချယ်ခြင်း

If a Burmese or pan-Asian grocer stocks rice labeled paw san or “Myanmar pearl rice,” try it — but inspect for broken grains and off smells, since it is often old stock. Otherwise buy jasmine from a high-turnover Asian market in the largest bag you will use within a few months; new-crop jasmine (often marked on the sack) is noticeably more fragrant. Skip “jasmine-style” supermarket blends, which have the shape but not the perfume.

Keeping itသိမ်းဆည်းခြင်း

Keep rice in a sealed container away from light and heat; a big jar or the bag folded inside a lidded bin is fine. It keeps for many months, but the aroma fades before the rice spoils — another reason not to overbuy. In humid kitchens or if you have ever had pantry moths, the freezer for 48 hours on arrival, then the sealed jar, ends the problem before it starts.

In the potမီးဖိုချောင်တွင်

Rinse until the water runs nearly clear, cook with a little less water than the package suggests (Burmese rice is served soft but never wet), and let it rest off the heat, covered, for ten minutes. Day-old rice is the correct rice for htamin gyaw (fried rice) and gets a second life in htamin thoke-style salads. When a curry’s oil returns and glows on top, that oil stirred through hot rice is the whole point of the cuisine.
