In the five-day rotating markets of southern Shan State — Taunggyi one day, Heho the next, the lake villages after that — there is always a stall where a woman slices a trembling yellow slab into ribbons, dresses them with a flick of tamarind and a spoon of red oil, and hands you a plate that costs almost nothing and tastes like the whole region. This is hto hpu thoke, the salad form of the chickpea tofu the Shan call simply hto hpu.
The tofu itself is the famous local invention: tofu-making arrived over the mountains with the Yunnan caravan trade, and somewhere along the way Shan cooks swapped soybeans for the yellow split peas and chickpeas that actually thrive in the hills. When that happened is honestly hard to pin down — the written record is thin before the late Konbaung era, though the caravan routes are far older. What is certain is that the dish belongs to these hills and nowhere else did it first.
Two things make or break the salad. First, the balance of the dressing — sour tamarind, salty soy, a whisper of jaggery — mixed and tasted before it ever meets the tofu. Second, restraint with your hands: thoke means mixed by hand, and the ribbons must be lifted and folded, never stirred, or you serve mash. Done right, it is cool, slippery, nutty, and quietly hot — the taste of a market morning at altitude.
Dress hto hpu thoke at the last possible minute — the tofu never stops releasing moisture, and a salad mixed ten minutes early arrives at the table swimming.

For the salad
- chickpea tofu (Shan tofu) — one chilled batch from our foundations chapter, or fresh yellow tofu from a Burmese grocer
- tamarind — seedless pulp, soaked in 60 ml warm water
- soy sauce — light — Shan kitchens reach for soy where the lowlands reach for fish sauce
- palm sugar (jaggery) — grated
For the garlic-chili oil
- peanut oil
- garlic — sliced into thin coins
- dried chili flakes

- roasted peanuts — roughly crushed

- pickled mustard greens — optional but very Shan — chopped fine

Step 1: Make the tamarind dressing
Mash the soaked tamarind into its water with a fork and press it through a sieve, discarding the fibers. Stir in the soy sauce and jaggery until dissolved. This sour-savory-sweet liquid is the backbone of the salad — taste it now, because no amount of tossing fixes a flat dressing later.
Step 2: Fry the garlic oil
Heat the peanut oil in a small pan over medium-low and add the garlic coins. Fry gently, swirling, until they turn the color of pale straw — 3 to 4 minutes — then pull the pan off the heat at once; they keep darkening in the hot oil. Lift the chips onto paper and keep both chips and oil. Burnt garlic turns the whole salad bitter, so err early.
Step 3: Bloom the chili
Put the chili flakes in a small heatproof bowl and spoon three tablespoons of the hot garlic oil over them. They should fizz and turn the oil brick-red. Blooming in oil rounds the chili's heat so it coats rather than stabs.
Step 4: Ribbon the tofu
Slice the chilled tofu into finger-width ribbons about 6 cm long, wiping the knife with an oiled cloth between cuts so it glides. Cold, fully set tofu cuts clean; warm tofu tears. Handle the ribbons like something you borrowed.
Step 5: Toss by hand
In a wide bowl, combine the tofu, tamarind dressing, chili oil, most of the plain garlic oil, and the pickled mustard greens if using. Thoke means mixed by hand, and hands are the correct tool — fingers spread, lifting and turning gently so the ribbons stay whole while every surface takes the dressing.
Step 6: Finish and serve immediately
Turn the salad onto a plate and scatter over the garlic chips, crushed peanuts, sesame, and cilantro. Serve within minutes — this is a salad with a short, glorious life, which is exactly why market vendors mix each plate to order.

A thoke is part of a spread as often as it is a light meal on its own:

Questions from the kitchen
Can I use ordinary soybean tofu?
You can, and it will be a pleasant different salad. Silken soy tofu is the closest texture, but it lacks the faint nuttiness and gentle sourness of chickpea tofu, which is half the dish. If a Burmese or Thai grocer near you sells fresh yellow tofu, that is the real thing.
My tofu ribbons keep breaking. What went wrong?
Either the tofu is not fully chilled or the batter was undercooked when it set. Refrigerate the slab at least two hours, use a thin oiled knife, and cut with one confident stroke. And take heart — when the tofu is too soft to slice, Shan cooks simply serve it warm and loose as hto hpu nway and nobody complains.
How far ahead can I prepare the parts?
Everything except the final toss keeps well. The dressing, garlic oil, and chili oil hold for days; the tofu keeps two or three days submerged in water in the fridge. Combine them only when the table is set.
